Ingredients

½ cup (100 g) sugar

1 vanilla bean

1½ cups (350 ml) whole milk

0.8 cup (200 ml) fresh cream

4 fresh egg yolks

0.3 oz (9 g) gelatin sheets
Instructions

Soak gelatin sheets in cold water for 15 minutes.

Split vanilla bean and scrape seeds. Heat milk, cream, vanilla bean, and seeds until near boiling.

Remove from heat, strain, add gelatin, and stir until dissolved.

Whisk egg yolks and sugar, then slowly mix in the warm milk mixture.

Pour into molds and chill for at least 4 hours.

To serve, dip mold in hot water briefly and invert onto a plate. Garnish as desired.
Notes
Use individual molds for easy serving.
For added flavor, try a splash of vanilla extract.
Serve chilled with fresh fruit or whipped cream.
