Pre-cook Bulgur
- 175 g bulgur
- 400 ml water
- 3 g salt
Dressing / Sauce
- 30 g tomato paste
- 25 ml vinegar
- 30 ml olive oil
- 25 g pomegranate molasses
- 2 g salad seasoning
- 1 g Italian herbs
- 15 g honey
Filling
- 125 g cheese cubes
- 175 g cucumber, diced
- 75 g green olives, sliced or whole
- 150 g cherry tomatoes, halved
- 250 g grilled bell pepper (from jar or homemade), chopped
- 75 g red onion, finely chopped
- 20 g fresh chives, chopped
- 10 g fresh dill, chopped
Heat a skillet over medium heat. Add bulgur, pour in water, and bring to a boil. Season with salt. Reduce heat, cover, and simmer for 10–15 minutes until the water is absorbed. Remove from heat and let it rest, covered, for a few more minutes.

In a bowl, mix tomato paste, vinegar, olive oil, pomegranate molasses, salad seasoning, Italian herbs, and honey until smooth and well combined.

Add the cooked bulgur to a large bowl, pour in the dressing, and mix well until evenly coated.

Finely chop the red onion. Cut the cheese into small cubes. Slice the cucumber, cherry tomatoes, and olives. Chop the grilled red and green peppers into bite-sized pieces. Finely chop the dill and chives.
Add the dill, red onion, green olives, cheese cubes, cherry tomatoes, grilled peppers, cucumber, and chives to the bulgur. Mix well until everything is evenly combined.
