🐔 Crispy Chicken Mixture

  • 300 g chicken breast
  • 200 ml buttermilk
  • 2 g salt
  • 3 g chicken seasoning
  • 5 g garlic powder
  • 4 g onion powder
  • 2 g black pepper
  • 2 g cayenne pepper
  • 1 egg

  • 150 g all-purpose flour
  • 50 g cornstarch
  • 3 g chicken seasoning
  • 5 g onion powder
  • 2 g cayenne pepper
  • 40 ml of the buttermilk mixture (from above)

  • 900 g potatoes
  • 3 g salt

👩‍🍳 Step-by-Step Instructions :

Peel the potatoes. Slice them lengthwise into slabs, then cut into thin sticks to make fries. Place the fries in a large bowl, add the salt, and mix well to coat evenly.

In a large bowl, combine the buttermilk, salt, chicken seasoning, garlic powder, onion powder, black pepper, cayenne pepper, and the egg. Mix well until smooth and fully combined.

Slice the chicken into strips and coat with buttermilk marinade. Refrigerate for 30+ minutes. Set aside 40 ml of marinade for the flour mix.

In a large bowl, mix flour, cornstarch, chicken seasoning, onion powder, and cayenne. Add the reserved 40 ml buttermilk marinade and rub it in with your fingers until the mixture becomes rough and clumpy—this helps create extra crispy chicken.

Take the marinated chicken strips and coat them thoroughly in the flour mixture. For an extra crispy crust, dip them again in the flour mixture a second time. Place the coated chicken pieces on a sheet of parchment paper and let them rest while the oil heats.

Heat sunflower oil in a frying pan over medium heat. Add the fries and cook for about 13–15 minutes, or until golden brown and crispy. Remove from the pan and let them drain on a sheet of paper towel.
