Ingredients

1 cup (150g) plain flour

2 tsp baking powder

2 tbsp sugar

1 large egg

3/4 cup (180ml) milk

1 tsp vanilla extract (optional)

1 tbsp melted butter (plus more for pan)
Instructions

Whisk flour, baking powder, and sugar in a bowl.

Add egg, milk, and vanilla. Whisk until smooth.

Heat a non-stick pan with a little butter, then wipe off excess.

Drop 1½ tbsp batter per pikelet into the pan.

Cook until bubbles form and pop, about 1–1½ minutes. Flip and cook the other side for 1 minute.

Serve stacked with jam and cream.
Notes
Batter should be thick but pourable—adjust with milk or flour as needed.
Use medium heat to avoid burning before bubbles form.
Great for freezing—just reheat in a toaster or pan.
