Description

Quick, fluffy, and perfect for breakfast or teatime, these easy homemade pikelets come together in minutes with pantry staples. Serve warm with jam and cream!


Ingredients

Scale
  • 1 cup (150g) plain flour

  • 2 tsp baking powder

  • 2 tbsp sugar

  • 1 large egg

  • 3/4 cup (180ml) milk

  • 1 tsp vanilla extract (optional)

  • 1 tbsp melted butter (plus more for pan)


Instructions

  • Whisk flour, baking powder, and sugar in a bowl.

  • Add egg, milk, and vanilla. Whisk until smooth.

  • Heat a non-stick pan with a little butter, then wipe off excess.

  • Drop 1½ tbsp batter per pikelet into the pan.

  • Cook until bubbles form and pop, about 1–1½ minutes. Flip and cook the other side for 1 minute.

  • Serve stacked with jam and cream.

Notes

Batter should be thick but pourable—adjust with milk or flour as needed.

Use medium heat to avoid burning before bubbles form.

Great for freezing—just reheat in a toaster or pan.
