Ingredients

8 organic lemons (zested)

1 liter vodka (or grain alcohol)

3 cups sugar

4 cups water
Instructions

Peel lemons, avoiding the white pith. Place zest in a jar with vodka.

Seal and let steep in a cool, dark place for 7–10 days, shaking daily.

In a pot, dissolve sugar in water over low heat; cool completely.

Strain lemon zest from vodka, then mix infused vodka with sugar syrup.

Bottle and chill before serving.

Use unwaxed, organic lemons for best flavor.
Steeping longer intensifies lemon aroma.
