Ingredients

1 kg (2.2 lbs) potatoes, peeled and cubed

½ cup mayonnaise

1 tbsp Dijon mustard

1 tbsp apple cider vinegar

2 celery stalks, diced

½ red onion, finely chopped

2 boiled eggs, chopped

Salt & pepper to taste

Fresh parsley for garnish (optional)
Instructions

Boil potatoes in salted water until fork-tender (10–12 minutes). Drain and let cool.

In a large bowl, mix mayo, mustard, and vinegar. Season with salt and pepper.

Add cooled potatoes, celery, onion, and eggs. Gently toss to coat.Chill for at least 30 minutes. Garnish with parsley before serving.
Notes
For extra flavor, add a pinch of paprika or chopped dill pickles. Want it lighter? Swap half the mayo with Greek yogurt.
