Description

A timeless favorite, this creamy potato salad is tangy, hearty, and perfect for picnics, BBQs, or a cozy family meal. Quick to prepare and full of flavor, it’s a side dish that never disappoints.


Ingredients

Scale
  • 1 kg (2.2 lbs) potatoes, peeled and cubed

  • ½ cup mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar

  • 2 celery stalks, diced

  • ½ red onion, finely chopped

  • 2 boiled eggs, chopped

  • Salt & pepper to taste

  • Fresh parsley for garnish (optional)


Instructions

  • Boil potatoes in salted water until fork-tender (10–12 minutes). Drain and let cool.

  • In a large bowl, mix mayo, mustard, and vinegar. Season with salt and pepper.

  • Add cooled potatoes, celery, onion, and eggs. Gently toss to coat.Chill for at least 30 minutes. Garnish with parsley before serving.

Notes

For extra flavor, add a pinch of paprika or chopped dill pickles. Want it lighter? Swap half the mayo with Greek yogurt.
