Description

A simple, juicy baked chicken breast topped with fresh tomato and melted mozzarella—a quick and tasty meal perfect for busy weeknights.


Ingredients

Scale
  • 1.1 lbs (500 g) chicken breast, halved

  • 1.4 cups (250 g) Datterino tomatoes, halved

  • 2 ¼ cups (250 g) mozzarella, sliced and drained

  • 1 ½ tsp rosemary, chopped

  • 0.9 tsp paprika

  • 2 garlic cloves

  • 4 basil leaves

  • Olive oil, salt, and pepper to taste


Instructions

  • Season chicken with paprika, rosemary, salt, pepper, and olive oil; massage and set aside.

  • In an oven-safe pan, heat olive oil with garlic, add tomatoes and basil, cook 10 minutes on low. Remove garlic.

  • Add chicken to pan, cover with foil, bake at 392°F (200°C) for 25 minutes.

  • Remove foil, cook 10 more minutes. Top chicken with mozzarella slices.

  • Broil at 464°F (240°C) for 5 minutes until cheese melts. Serve hot.

Notes

  • Let mozzarella drain well to avoid soggy topping.
  • Use a meat thermometer to ensure chicken reaches 165°F (74°C) for safety.
  • Swap rosemary for thyme for a different herb twist.
