Ingredients

1.1 lbs (500 g) chicken breast, halved

1.4 cups (250 g) Datterino tomatoes, halved

2 ¼ cups (250 g) mozzarella, sliced and drained

1 ½ tsp rosemary, chopped

0.9 tsp paprika

2 garlic cloves

4 basil leaves

Olive oil, salt, and pepper to taste
Instructions

Season chicken with paprika, rosemary, salt, pepper, and olive oil; massage and set aside.

In an oven-safe pan, heat olive oil with garlic, add tomatoes and basil, cook 10 minutes on low. Remove garlic.

Add chicken to pan, cover with foil, bake at 392°F (200°C) for 25 minutes.

Remove foil, cook 10 more minutes. Top chicken with mozzarella slices.

Broil at 464°F (240°C) for 5 minutes until cheese melts. Serve hot.

- Let mozzarella drain well to avoid soggy topping.
- Use a meat thermometer to ensure chicken reaches 165°F (74°C) for safety.
