Ingredients Potato Salad :
- Potatoes – 1.8 lbs (800 g)
- Natural plain yogurt (unsweetened) – ½ cup (125 g)
- Mustard (delicate) – 2 tbsp (30 g)
- Fine salt – to taste
- Fresh parsley – 1 bunch, chopped
- Mayonnaise – 0.4 cup (100 g)
- Fresh chives – 1 bunch, chopped
- Black pepper – to taste
Step-by-Step Potato Salad Recipe :
To make the Potato Salad, begin by boiling whole potatoes with their skins on in cold water for about 40 minutes. Test doneness by piercing them with a fork. While the potatoes cook, chop the fresh parsley and chives. In a large bowl, combine the natural plain yogurt to prepare the dressing.

Add the mayonnaise and mustard to the bowl, then whisk everything together until well combined.

Stir in the chopped parsley and chives, then season the dressing with black pepper and salt to taste.

Mix the dressing again to fully combine. By now, the potatoes should be cooked—drain them, peel off the skins, and cut into large cubes.

Add the potato cubes to the bowl with the dressing and gently mix to coat them without breaking. Cover and refrigerate the potato salad until ready to serve.

💡 Tips :
For a more gourmet touch, try making your own homemade mayonnaise—it’s fresher, richer, and elevates the flavor of the potato salad.
